Poulet Marengo (Chicken Marengo)
I had Swiss steak nearly every week growing up. It was one of my favorite meals my mom would make. I loved the tomato sauce poured over mashed potatoes and the bell peppers.

Ingredients
- 2 lbs.round steak
- 1 cup flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 2 onions, sliced
- 2 bell peppers, sliced
- 1/4 lb. mushrooms, sliced
- 2 cans of tomato sauce with added puree
- 1/2 cup water
- 1 small can tomato paste
Instructions
- Using a meat mallet pound the steak until 1/4 " thickness.
- Mix flour with salt, pepper and paprika in a shallow bowl. Dredge the steak in flour mixture making sure it is fully covered in flour.
- In large skillet; heat oil over medium-high heat. Add the steak and cook about 5 minutes per side. Remove steaks from pan and set aside. Add garlic, onions, peppers and mushrooms to pan and cook a few minutes, till semi soft. Stir in tomato sauce, water and tomato paste. Bring to boil and add steaks.
- Cook over medium heat for 30 minutes. Serve with mashed potatoes.
Notes
- Using a meat tenderizer to pound the steak before cooking will help make meat more tender. I tenderize my steak till it's very thin and then dredge in flour.
