Ingredients
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, minced
- 1 cup mushrooms, sliced
- 1 cup red bell pepper, chopped
- 2 28 oz. cans plum tomatoes, peeled and chopped
- 2 tablespoons oregano
- 2 tablespoons rosemary
- 2 tablespoons basil
- 1/2 cup dry red wine
Instructions
- In a large saucepan over medium-high heat, add oil, garlic, onion, mushrooms, bell pepper and rosemary, sauté. Cook till onion is tender. Stir in tomatoes, oregano, basil, simmer for 20 minutes or until vegetables are soft and flavors are blended. Add wine and cook for another 5-10 minutes. Serve over pasta of your choice and meatballs.
