Ingredients
- 3/4 cup water
- 3 tablespoons unsalted butter, cut into pieces
- 1/4 teaspoon salt
- 1/4 teaspoon sugar
- 3/4 cup flour
- 3 large eggs
Filling
- 1 cup chilled whipping cream
- 1 teaspoon plus 2 tablespoons sugar
- 1/4 teaspoon vanilla
- 6 large strawberries, hulled
Strawberry Sauce
- 2 1 pint baskets strawberries, hulled
- 3 tablespoons sugar
Instructions
- Preheat oven to 375 degrees.
Cream Puff
- Line one baking sheet with parchment paper.
- In a heavy medium saucepan combine water, butter, salt and sugar. Bring to boil, stirring to melt butter. Add flour, using a wooden spoon, stir vigorously until mixture clumps together forming a ball. Stir 1 minute longer. Remove from heat. Transfer dough to medium bowl.
- Using a mixer add eggs 1 at a time, beating until dough is smooth. Using a rounded tablespoon for each cream puff, spoon dough out onto parchment paper lined baking sheet, 2" apart forming mounds, about 1" high and 1 1/4 " diameter. Using a moist fingertip, gently press any peaks that may have formed.
- Bake until golden brown about 35 minutes. Let cream puffs cool.
Sauce
- In a medium mixing bowl beat whipping cream with 1 teaspoon sugar and vanilla until soft peaks form. Combine 6 strawberries and 2 tablespoons sugar in a small bowl. Using fork, crush berries. Fold crushed berries into whipped cream. Cut top third off each puff. Spoon filling into bottoms, and mound slightly.
- Ladle sauce over, allowing sauce to spill onto plates. Top with cream puff tops. Dust with powdered sugar.
