Ingredients
- 4 skinless chicken breasts, halved
- 1/3 cup flour
- Salt pepper to season
- 4 tablespoons olive oil
- 1/2 cup dry white wine
- Juice from 1/2 lemon
- 2 - 3 garlic cloves, minced
- 1 cup chicken broth
- 2 tablespoons capers, drained
- 3 tablespoons unsalted butter
- Fresh lemon slices
Instructions
- Mix together salt and pepper to flour.
- Using a meat tenderizer, pound chicken breasts to 1/4 " thick. Dredge chicken in the flour mixture. Add 4 tablespoons olive oil to heavy skillet, heat over medium-high heat. Add chicken breasts to skillet, sauté for 2-3 minutes on each side or until light brown.
- Remove from pan. Add white wine and garlic to the skillet to de-glaze. Cook until garlic is slightly browned and wine is reduced by half, about 2 minutes. Add chicken broth, lemon juice, and capers. Return chicken to pan and cook each side for another minute.
- Remove and transfer to warm plate.
- Add butter and lemon slices to pan, stir. After butter has melted pour over chicken breasts. Serve.
