Ingredients
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 4 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 3 eggs
- 1 cup vegetable oil
- 2 1/4 cups sugar
- 3 teaspoons vanilla
- 2 cups grated zucchini
- 1 cup chopped walnuts
- 1 cup chocolate chips
Instructions
- Preheat oven to 325 degrees.
- Grease and flour 2 loaf pans.
- In a medium bowl sift together flour, salt, baking powder, baking soda, cinnamon, and nutmeg
- In a large bowl beat eggs, oil, vanilla, and sugar together. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini, nuts, and chocolate chips until well combined.
- Pour batter into prepared loaf pans.
- Bake for 40 to 60 minutes, or until tester inserted in center comes out clean.
- Cool in pan on rack for 20 minutes.
- Remove from pan and cool completely.
