I have found that once I set my mind to making a dish i will. There have been on a few occasions where I found that I don’t always have all the ingredients required to make the dish I set out to make. I am hoping that the substitutions here, will help you in a pinch. If you are anything like me, once I am home I am home bound and it would almost take an act of God to get me to the store. I always try to have all the basic’s on hand just in case, but sometimes it’s not always the case.
If the recipe calls for: Use Instead:
Baking powder 1 teaspoon 1/4 teaspoon soda + 1/2 teaspoon cream of tartar
Bread crumbs, fine dry 1 cup 3/4 cup finely crumbled crackers
Broth, Chicken or Beef 1 cup 1 bouillon cube or 1 envelope instant broth
Butter or Margarine 1 cup 1 cup vegetable shortening + 1/2 teaspoon salt
Buttermilk 1 cup 1 cup plain yogurt or 1 cup whole milk + 1 tablespoon
lemon juice or vinegar (let stand for 5 minutes)
Chocolate,unsweetened 1 square (1 oz.) 3 tablespoons cocoa + 1 tablespoon butter
Cornstarch 1 tablespoon 2 tablespoons all-purpose flour (for thickening)
Corn syrup, light 1 cup 1 1/4 cups granulated sugar + 1/3 cup water (not for baking)
Cracker crumbs, fine 1 cup 1 1/4 cups dry bread crumbs
Cream, heavy 1 cup 3/4 cup milk + 1/3 cup melted butter (not for whipping)
Cream, light 1 cup 3/4 cup milk + 1/4 cup melted butter
Cream, sour 1 cup 1 cup less 2 tablespoons plain yogurt or buttermilk + 3
tablespoons melted butter
Flour, cake 1 cup 1 cup less 2 tablespoons sifted all-purpose flour
Flour, self-rising 1 cup 1 cup flour + 1 1/4 tablespoons baking powder + pinch of salt
Garlic 1 small clove 1/4 teaspoon garlic powder
Half and half 1 cup 1 cup less 2 tablespoons milk + 1 1/2 tablespoons melted butter
Herbs, fresh 1 tablespoon 1 teaspoon dried herbs or 3/4 teaspoon ground herbs
Honey 1 cup 1 1/4 cups granulated sugar + 1/3 cup water
Ketchup or Chili powder 1/2 cup 1/2 cup tomato sauce + 2 tablespoons sugar, 1 tablespoon vinegar
& 1/8 teaspoon each ground cloves & allspice
Lemon juice 1 teaspoon 1/2 teaspoon vinegar
Lemon rind, grated 1 teaspoon 1 1/2 teaspoon lemon extract
Milk, skim 1 cup 1/3 cup instant nonfat dry milk powder & 3/4 cup + 2 tablespoons
ice water
Milk, whole 1 cup 1/2 cup evaporated milk + 1/2 cup water, or 1 cup water + 1/3 cup
instant nonfat dry milk powder & 2 teaspoons melted butter, or
1 cup skim milk + 2 teaspoons melted butter
Mushrooms, fresh 8 oz. 1 6-oz. can mushrooms, drained
Mustard, prepared 1 tablespoon 1/2 teaspoon dried mustard
Onion 1 small 1 tablespoon instant minced onion
Oregano, dried 1 teaspoon 1 1/4 teaspoon dried marjoram
Pork, ground 8 0z. 8 oz. mild sausage
Red pepper sauce 2-3 drops 1/8 teaspoon ground red pepper (cayenne)
Sugar, brown 1 cup 1 cup granulated sugar
(firmly packed)
Tomato paste 1 tablespoon 1 tablespoon ketchup
Tomato sauce 1 cup 6 tablespoons paste + 2/3 cup water + seasonings
Vinegar 1 teaspoon 2 teaspoons lemon juice
Yogurt, plain 1 cup 1 cup buttermilk
