Poppy Seed Dressing
Caesar salad is one of my most favorite salads, I love the tang of lemon and the salty flavor of anchovies. When I make this dressing, depending on the company I add more lemon juice and mayonnaise. The beauty of this dressing is you can add more or less of one or more ingredients and still come out with a wonderful dressing. I like the strong flavor of garlic so at times I add more and skip making the croutons. Which ever you choose to do I think you’ll really like this Caesar salad dressing.

Ingredients
- 7 garlic cloves, 4 cloves sliced - 3 for dressing
- 1 cup mayonnaise
- 1 tube anchovy paste, or to taste
- 2 tablespoons plus 1/2 cup grated Parmesan
- 2-3 tablespoons lemon juice
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 head romaine, cut into bite size
- 1/4 cup olive oil
- 4 cups 3/4-inch bread crumbs (made from day old bread, crusts removed)
Instructions
- Mince 3 garlic cloves.
- In a medium bowl add mayonnaise, anchovies, Parmesan cheese, lemon juice, Worcestershire sauce and mustard. Blend. Season with salt and pepper
- Croutons
- In a large heavy skillet heat olive oil over low heat. Add the 4 sliced garlic cloves to skillet, cook until garlic is golden brown, stirring frequently, about 5-6 minutes. Remove garlic with a slotted spoon and discard.
- Add bread cubes to skillet and cook over low heat, until golden brown, stirring frequently about 15 minutes.
- Remove from heat. Season with salt and pepper
- Cool to room temperature.
- Place romaine in a large bowl. toss with enough dressing to coat. Add remaining Parmesan cheese and croutons. Toss gently to blend
