Ingredients
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon soda
- 1 teaspoon salt
- 1 whole orange rind grated
- 2 cups cranberries, chopped
- 3/4 cup chopped pecans
- 1/4 cup butter
- 1 cup sugar
- 1 cup orange juice
- 1 egg, beaten
Instructions
- Preheat oven to 350 degrees. Grease and flour a 9x5-inch loaf pan. Whisk together flour, baking powder, baking soda, and salt. Stir in orange zest, cranberries, and pecans. Set aside.
- In a large bowl beat together butter, sugar, and egg until smooth. Stir in orange juice. Add flour mixture combine until just moistened. Pour into prepared pan.
- Bake for 1 hour, or until the bread springs back when lightly touched or toothpick comes out clean. Let stand 10 minutes.
