Ingredients
- 1 medium onion, chopped
- 2 tablespoons salad oil
- 1 (4 ounce) can green chilies, diced
- 1 1/2 tablespoons flour
- 1/4 cup chicken broth
- 3/4 cup sour cream
- 1 can pimentos, chopped
- 3 1/2 cups medium or sharp cheddar cheese, shredded
- Tortilla chips
Instructions
- In a medium size frying pan, sauté onion in oil until tender. Add the chilies and cook for 1 minute more. Blend in flour; gradually add broth, then sour cream. Heat until boiling and slightly thickened. Reduce heat and add pimentos. Gradually stir in shredded cheese, stirring until melted. Serve warm and scoop on to tortilla chips to eat.
