Ingredients
- 3 3/4 cups flour
- 3 1/2 teaspoon ground cloves
- 4 teaspoons cinnamon
- 2 1/2 teaspoons ginger
- 1 1/4 teaspoons baking soda
- 12 tablespoons unsalted butter softened
- 1 cup packed dark brown sugar
- 1/2 cup dark corn syrup
- 1/2 cup heavy cream
Instructions
- In a large mixing bowl, whisk together the flour, cloves, cinnamon, ginger and the baking soda; set aside. In another large mixing bowl, beat together the softened butter, brown sugar, and the dark corn syrup using a handheld mixer at medium speed. Beat the mixture until light and fluffy, 2–3 minutes. Start adding the reserved spice mixture and the heavy cream in 3 alternating batches, beginning and ending with the spice mixture, until the dough is combined.
- Transfer dough to a work surface, divide dough in half, wrap each half in plastic wrap and refrigerate for 3 hours or overnight.
- Heat oven to 375 degrees.
- Unwrap one half of dough and place on a floured work surface. Using a rolling pin, roll out the dough to a thickness of 1/8” Cut out the cookies using your favorite cookie cutter, (mine is a reindeer) and place cookies on a parchment covered baking sheet. Repeat with remaining dough, re rolling unused dough. Bake cookies, until browned and set, about 10-12 minutes. Transfer cookies to a wire rack and let cool.
