Ingredients
- 12 oz. frozen peeled and deveined medium shrimp, thawed
- 1 lemon
- 8 oz. dried fettuccine
- 2 tablespoons olive oil
- 4 garlic cloves, thinly sliced
- 6 cups baby spinach
- 1/4 teaspoon Italian seasoning, crushed
- Fresh dill sprigs
Instructions
- Rinse shrimp; pat dry with paper towels.
- Zest peel from the lemon; set aside. Cook pasta according to package directions.
- Meanwhile, in a medium sized skillet heat olive oil over medium heat, add garlic and cook for 1 minute. Add shrimp; cook for 3 to 4 minutes, stirring until shrimp are pink. Add spinach and drained pasta; toss till spinach begins to wilt. Stir in Italian seasoning, lemon peel, and 2 tablespoons lemon juice.
- Season with salt and pepper. Top with fresh dill sprigs.
