Waffles
This is certainly one of my most favorite breakfasts, although they are eaten throughout the day in Sweden. They are super simple to make having the right type of pan. My daughter Ashley, when she was visiting my mom and dad, her grandparents, in Sweden, brought back with her a pan to cook Swedish pancakes in. It’s a cast iron pan with 8 small circles about 2/12 ” wide. It’s been one of many wonderful gifts from her.

A simple recipe for a simple breakfast. I dust my Swedish pancakes with powdered sugar and if I have lingonberries I put a big dollop right on top.

Ingredients
- 2 eggs
- 1 cup flour ( I like bread flour, but all purpose works just as well)
- 1 1/4 cup milk
- little less then a 1/4 teaspoon of salt
- Butter for pan
Instructions
- Beat eggs with milk, flour and salt.
- The batter should be a little thick like heavy cream.
- Set aside for at least 20 minutes.
- Heat your pan on medium heat and melt butter.
- Pour a small amount into pan and tilt to cover.
- Cook till top of pancake looks matte, browned and crispy on sides.
- Flip to cook other side for a minute.
- Repeat till batter is gone.
- Serve with powdered sugar and Lingonberries.
